Each recipe comes with a "Tuber Check" that reveals whether the star ingredient is botanically a true tuber, or an impostor :)
On the plates of Corey Lee (James Beard Award winner), Arielle Johnson (Noma flavor scientist), Claire Ptak (royal baker), Thalia Barrios García (Oaxacan standard-bearer), and visual artist Motoyuki Daifu, tubers take the form of fresh salads, fried enyucados, or iced horchata.
Swiss Design Award winner Olga Prader brings the book to life with her illustrations—delightfully taking us underground.

Olga Prader — Illustrator
Born in 1986 in Paris, Olga Prader is a graphic designer, art director, and illustrator based between Paris and Switzerland. A graduate of ECAL in Lausanne and the Gerrit Rietveld Academie in Amsterdam, she worked from 2014 to 2017 at the studio M/M Paris—a global benchmark in graphic design. Her black-and-white, critical, humorous, and sometimes erotic style has been published in Frieze, Art Review, and Zeit Magazin. In 2021, her illustration work won the Swiss Design Award.

Founded in Barcelona in 2008 by Omar Sosa, Nacho Alegre, and Marco Velardi—a photographer and two designers—Apartamento was born from a simple conviction: to show interiors as we live in them, not as we display them.
