CHINESE CLEAVER - CHUKA BOCHO - BLADE 18.5 CM - PALLARES SOLSONA
The Chinese cleaver (in Japanese Chuka Bocho) is an ultra-versatile knife, primarily used by Chinese and Japanese cooks as an all-purpose knife.
Indeed, its flat razor sharp edge allows you to mince, chop, slice, pound, it is used to crush garlic cloves, or as a shovel to transfer food cut from the board to the pan.
Like a Nakiri, it is used to precisely slice vegetables and very finely chop herbs, but its power and the size of its blade allow it to work with very large specimens. For meat and fish, it is ideal as a hand chopper or for slicing, it can also tackle poultry bones and small bones (be careful though, this is not a butcher's sheet).
Rectangular stainless steel blade, 18.5 cm long, 8 cm high, 2 mm thick, through tang, traditional Catalan boxwood handle, very resistant.
For safe, precise and fast work, the height of the blade makes it easy to use fingers as a guide.
Each piece is unique, finished and sharpened by hand.
Handcrafted by Pallares, cutlers since 1917 in Solsona, at the foot of the Spanish Pyrenees.
Solsona is a small, well-preserved town in Catalonia, at the foot of the Pyrenees, where the knife industry is a tradition dating back to the 16th century.
This industry reached its peak there in the 18th century, when it boasted 24 workshops grouped within the guild of Saint-Eloi, the patron saint of cutlers. Today, only one remains... the Pallares workshop.
The Pallares company was founded in 1917 by brothers Lluis and Carles Pallares Canal. It is managed today by David Pallares, the third generation of artisan cutlers.
If Pallares still exists, it is because, unlike the other artisans in the town, it managed to modernize in the 1960s and expand its market to the rest of Spain and Europe.
It is also, and above all, thanks to the quality of its steel! And the sharpness of its blades, which are all finished and sharpened by hand!
Famous for its knives, the artisanal company still produces hand-forged garden tools in the purest Catalan tradition. Highly functional and effective, they are magnificent witnesses to an ancestral craft.
